Here is a delicious, healthy way to serve your vegetables.

1/2 medium zucchini

1/2 medium summer squash

1/2 each medium red and yellow bell pepper

1/2 pound fresh asparagus

1/2 red onion

 1 cup white button mushrooms

1 1/2 tablespoon extra virgin olive oil

1/2 teaspoon salt

fresh ground pepper

Cut all vegetables into bite-sized pieces.  Preheat oven to 450 degrees. Place cut vegetables , olive oil, salt, pepper and seasonings,i.e. garlic, rosemary,oregano, in a resealable plastic bag, shake to coat well. Place veggies in roasting pan. Roast , stirring occasionally until the vegetables are lightly browned and tender,(15-30 mins) Recipe is for 2 servings.
